Getting to know our Culinary Crew.
Food Services at Dalhousie has the talents of Chef Ray Wincey at the helm of Howe Hall Dining Hall. Arriving at dawn and walking from Dartmouth, Chef Ray says he “enjoys the long and busy days” of juggling all the production of the team of people in the kitchen for Dalhousie’s largest kitchen, serving 800 students three meals a day, retail production for the campus and catering production. His pride of “cooking from scratch” especially with fresh local ingredients brings him great satisfaction at the end of a long day and savoured by the students.
Chef Ray joined the Dalhousie food service team in 2006 as Head Chef with over 30 years of experience in the cooking field. Ray has participated in many culinary competitions over the years and still enjoys the challenge.

Little Known Fact:
Every month, Chef Ray, wakes up at 4:00am to begin the preparation of cooking for nearly 150 homeless and/or disadvantaged people who use Hope Cottage's services in Halifax. It is a labour of love for Chef Ray, it is just something he feels is right to do for his community. “They deserve a good meal,” says Chef Ray, “I don’t mind doing it.”
Last winter Chef Ray won the prestigious Jefferson Award Bronze Medal
“We are pleased to honor the volunteer accomplishments of Eastern Canada Star Team member Ray Wincey, one of 59 ARAMARK Outstanding Volunteer Award winners from across the country. Ray, with Higher Education at Dalhousie University, was chosen for his volunteer work with Hope Cottage. He was also recognized by the Jefferson Awards for Public Service with a Bronze Medal for volunteer achievement.”
The Jefferson Awards are a prestigious national recognition system honoring community and public service in America. Their primary purpose is to serve as a "Call to Action for Volunteers" in local communities.
