RECENT EVENTS
            Uncommons opens with a bang!  In the month of September, students and faculty alike were treated to a 70’s dinner, featuring food from the 70’s, disco music and costumes.  The turn-out was fantastic and a good was had by all.
           October 24th was the start of parent’s weekend.  Students and parents were treated to a grand buffet featuring carved roast sirloin, chicken Picatta, homemade sushi and a vast assortment of homemade side dishes and fresh baked breads.  On the 28th we also held an October Fest dinner, we served a variety of German foods from baked pork loin with apples, warm potato salad, Bavarian style cabbage, German chocolate cake and streusel.  
            On Halloween Uncommons was transformed, guests were treated to a haunted dinner.  A giant ice carving in the shape of a spider stood guard over grave yard cakes, candy apples, and an assortment of candy.  Our servers took part by dressing in costumes as well as many of the students. 
            November 2nd through the 8th was Wellness Week.  Our weekly menu featured proteins from Misty Knoll and Northeast Family Farms, free range chicken, grass fed beef and locally raised turkeys.  We also served local and organic side dishes, cheeses and fruits.  We were able to do this in large part with the help of Aggie Kip and a grant from the Abbot Association.  Upcoming events include International Week and a Native American Dinner.
            


 Executive Chef, Eric Heinrich ~ Starts August 27th

 We are pleased to announce our professional search for an Executive Chef over this summer has come to an end.  Eric Heinrich has accepted the challenging yet very exciting position here at Phillips Academy as our Executive Chef. Eric brings 20 years of hospitality, food and beverage management experience with him to our dining services team at Phillips Academy. Eric’s most recent role was as the Executive Chef at CR Sparks in Bedford, New Hampshire. Eric directed all culinary and purchasing operations while in this role. Prior to this Eric was the Executive Chef at the Brookstone Grill in Derry, New Hampshire where he developed and implemented all opening procedures for this new multi-million dollar restaurant and function facility. Including front of house procedures, menu design and development, restaurant and kitchen design. Eric has also spent some of his professional years focusing on training and development at Turner Fisheries and Westin Copley Place Hotel both located in Boston, Massachusetts and The Essex House Hotel and Starwood Hotels in New York City. Eric will be great asset to our team as we continue to enhance our culinary training and development programs at Uncommons and as we move into the state of the art Common’s facility. Eric will also play a key role in the Commons Food Advisory Committee, assisting in the menu development and implementation, as well as supporting our “Green Thread” sustainability initiatives.

Baker, Dawn Potvin ~ Starts September 3rd

 In our continued effort to fortify our very solid culinary team, we have hired an experienced baker. Dawn Potvin will be heading up the bakery department beginning this September. We look forward to Dawn’s homemade cookies, brownies, pastries, mud pies, chocolate cakes and much, much more. Dawn will also work closely with Eric Heinrich to develop a variety of new catering sweets!
