April 19:
Dinner in Bartlett, Burton Judson and Pierce will feature local ingredients  

April 20:
Dinner in Bartlett, Burton Judson and Pierce will feature Monterey Bay approved fish.  Visit http://www.montereybayaquarium.org/cr/seafoodwatch.aspx for more information 

April 21:
Visit Bartlett during dinner to discover your ecological footprint
Dinner in Bartlett, Burton Judson and Pierce will feature organic ingredients

April 22:
Visit lower level Bartlett to decorate a paper bag from your local Treasure Island grocer 12-2pm
Dinner in Bartlett, Burton Judson and Pierce will feature an Earth Day spread 

April 23:
Visit the Reynolds Club Marketplace to make your pledge to be sustainable 12-2pm
Dinner in Bartlett, Burton Judson and Pierce will feature desserts made with local ingredients 

April 24
Visit the Academic Quad for the annual Green Fest 11am – 2pm
Visit Pierce for the open forum hosted by Chris Stemen, Senior Director of Sustainability and Environmental Stewardship for ARAMARK Higher Education 3pm – 4pm
Dinner in Bartlett, Burton Judson and Pierce will feature local and organic ingredients

Chicago Campus Dining is continually increasing its sustainable practices while serving the campus community high quality foods with top-notch customer service.  Below is a list of our current sustainability initiatives.  

WASTE REDUCTION & RECYCLING

  • Refillable coffee mugs for sale at Einstein Bros. Bagels
  • Switch to using compostable cups in Bartlett, Burton Judson and Pierce
  • Nutritional information can be found on the website, eliminating the use of printed brochures
  • Use 100% recyclable napkins
  • Offer bulk condiments when possible instead of packets
  • Recycle cardboard boxes at all seven location
  • Compost at Bartlett, Burton Judson and Pierce  
  • Save paper printed on one side for printing on the other side, or for use as scratch paper
  • Enable energy saving features on the computers
  • Donate used fryer oil for production of bio-diesel in vehicles
  • Participates in Recyclemania, a 10-week competition among colleges and university recycling programs.  More information can be found at http://www.recyclemaniacs.com/
  • Recycle office supplies including printer cartridges and paper
  • Reusable bags available in Maroon Market
  • Introduce trayless trials to reduce waste and water

GENERAL SUSTAINABLE EFFORTS

  • EcoGround & Fair Trade Coffee is offered in Maroon Market and Einstein Bros. Bagels
  • Repurposing of scrap or unconsumed food items when appropriate for soups, stocks, etc.
  • Properly filtered fryer oil to extend oil life
  • Converting all lights to energy efficient bulbs
  • Turn off lights when closed
  • Low emission fluorescent lights in coolers
  • Turn off hot boxes when not in use
  • Only run dish machine when needed and automatic turn-off
  • Purchase items in bulk which requires less packaging
  • Inspect door seals on refrigeration equipment
  • Purchase all chemicals in bulk and dilute into reusable bottles
  • Video/teleconferencing or telecommuting
  • Resale or surplus unneeded equipment
  • Use rechargeable batteries
  • Purchase from local Minority and Women Business Enterprises (M/WBE)
