The Man Behind the Apron

Chef Ray Wincey
Every month, Chef Ray Wincey wakes up at 4:00am to begin the preparation of cooking for nearly 150 homeless and/or disadvantaged people who use Hope Cottage's services in Halifax. It is a labour of love for Chef Ray, who did not even want this article created or published about his efforts...it is just something he feels is right to do for his community. “They deserve a good meal,” says Chef Ray, “I don’t mind doing it.” Not only does Ray not mind preparing 150 meals worth of food for Hope Cottage, he continues his day on Dalhousie's campus, cooking for over 700 residents at Howe Hall with his fellow ARAMARK staff.

The meals Chef Ray prepares aren’t your pre-conceived “serving line” fare either. Chef Ray goes all out to prepare a meal worthy of a family Sunday dinner. Take the last two meals served at Hope Cottage (visit www.hopecottage.ca to learn more): in September, Chef Ray and ARAMARK served up Parmesan chicken breasts, potato salad, and coleslaw, while this past serving day in October yielded generous servings of turkey, stuffing, mashed potatoes, corn, and gravy. The meals are so good, Hope Cottage’s patrons typically ask exactly when Chef Ray’s food will be returning in the next month...but we keep that secret to avoid all of Halifax lining up outside the door on ARAMARK’s day to serve at the Cottage!
So, next time you see Chef Ray around Howe Hall, give him some kudos for the great work he does in cooking for Hope Cottage every month!
